芋絲的主要成分為蒟蒻粉，把蒟蒻芋的地下塊莖去皮，經切片、乾燥、磨碎，最後過蒒便成蒟蒻粉、蒟蒻粉，再經加工便可製成芋絲。芋絲不含脂肪，其主要成份為水(97%)、水溶性纖維－聚葡甘露糖(glucomannan)、鉀、鈣、鐵、磷和少量蛋白質等。
